Hello, New to the forum so please forgive me if this question has been asked before. How do or where do you go to change the color of an existing skin?? Thank you in advance!!

It really depends on what color you'd be trying to change, background, buttons, text, etc. To get you started, all of the skins are by default stored under C:\ProgramData\TouchJams\Skins. You can go in there and look at all the image files, that'd give you an idea of how skins are setup in TouchJams. Each skin has an associated XML file, and that specifies things like button placement, colors, etc. Within TouchJams is a skin editor (Options/Display/Skins - Edit). This skin editor basically modifies the skin XML file. There's more stuff here on the forum about setting up hotkeys to modify skin components.
